I love this hot chocolate because it is so easy to tone down for a tea like consistency and aroma, or to add more coconut milk and steep the star anise longer, for a super creamy and fragrant version. And it is only three ingredients, plus sweetener. But, if you are avoiding sweeteners, this drink is also great because the coconut milk brings a natural sweetness to it.

Description
This hot chocolate is a perfect combination of creamy and spiciness – the aroma of the star anise gently wakes you up while the coconut milk comforts you.
Ingredients
- 1 cup of water (250ml)
- 1/2 cup of coconut milk (125ml)
- 1 star anise
- 1 tablespoon of brown sugar
- 15 grams of 100% unrefined chocolate
Instructions
- Boil the water with the star anise for 5 minutes.
- Add the coconut milk, bring to simmer.
- Remove from heat, add sugar and chocolate.
- Whisk until chocolate is dissolved.
- Pour through sieve into cup.
Notes
- You can adjust creaminess here, instead of adding coconut milk, you can add the same measure in coconut cream.
- If you want more or less star anise flavor, let the aniseed boil longer or less.
- You can replace the tablespoon of brown sugar with 1 date. Add the date with the boiling water, blend all ingredients until date is creamy. Sieve into cup.
