Quinoa arroz con leche is a combination of my love for rice pudding and my desire to be healthier. At first I wanted to make a 100% healthy arroz con leche. But it was so bad. My first attempt was quinoa, almond milk, bananas (this was my sweetener), and cinnamon. It was just bad. I decided that adding the quinoa instead of the rice was going to be my healthy version. I tried this recipe with sugar, honey, agave, and stevia and they all did well. I also tried it with almond milk but couldn’t seem to create the thickness that I love in rice puddings and it had a strange taste.
I suggest using water, coconut milk, or cow’s milk. All other options will be strange here. The texture of the quinoa might not be for everyone, but it’s certainly worth trying at least once. Unlike rice, quinoa does not really soften, it still remains like little marbles in your mouth.

Ingredients
- 1 cup quinoa
- 1 cup of water
- 1 ceylon cinnamon sticks (or 2 teaspoons of cinnamon powder)
- 5 cups of milk
- ½ cup of sugar
- 1 small piloncillo (optional)
Instructions
- Boil on medium heat: quinoa, water and cinnamon until water is absorbed.
- Add 4 cups of milk.
- When the quinoa reaches your desired consistency remove from the heat and add 1 cup of milk.
Let cool and enjoy warm.
