Yam Flan Recipe

  • Yield: 1 9" flan or 6 small flans 1x

Description

Sweet yam flan for you or a party. 

Tools: cake pan 9″ or 6 small cake pans 4″


Ingredients

Scale
  • 2 cups of milk
  • 1 cup heavy cream
  • 2 cups of sugar
  • 4 whole eggs
  • 1 teaspoon vanilla
  • 1 medium yam; makes about 1 cup of yam puree

Instructions

  1. Burn 1 cup of sugar and place in your baking dish. (See above for options on burning your sugar).
  2. Bake or boil your yam and then puree.
  3. Pass yams through sieve.
  4. Blend all ingredients together and pass though sieve again into your baking dish.
  5. Place your baking dish in a larger pan and place in oven. Add water to your larger baking dish.
  6. Bake for 45 minutes to 1 hour. You know it’s ready when it jiggles in the center but not so much on the edges.
  7. Turn off your oven and leave it in the oven for 30 more minutes.
  8. Remove, let cool 1 hour, then place in the fridge until it gets cold, about 2 to 4 hours. Or leave overnight.
